Did you try using a Garret VNT turbo? ( variable geometry )

So, did you already tried it? Using a Garret VNT22 or 25 for example? @ 1000rpm starts boosting, with max boost around 2000, 2500rpm.

my question is because i'm "afraid" the holset hx40 turbo just makes the car too "hardcore" ...

give me your feedback about it... is it progressive? before 2.500 rpm how is it?

VNT-turbochargers have not been used in Super Turbos. They are only good to about 200hp, so they are really too small. Also using big turbo is the only way to limit torque in low engine speeds. Low end torque is your transmission's worst enemy. One guy had too much fuelling when using small stock turbo. He had over 1bar boost from 1000rpm. Then he broke transmission, propeller shaft and differential because of too much low end torque...

Check this dynograph from another Super Turbo (this is 3-liter 24v diesel).

As you can see there's 300Nm at 2000rpm which is not that bad, right? Stock engine's max torque is 330Nm between 1600 and 3600rpm.

Sure the VNT charger would be good choice if you want smooth acceleration and are happy with approximately 200hp.

So big turbos are the way to go ...

For example, i have a Mercedes 190 and i'm getting a new engine. These are my possibilities

2.500 TD 20v
2.500 TD 10v
3.000 TD 12v

From these tree i must pick one up that will be my daily drive car. I want more power, yes, but what do you think is the best engine from the three, and what's the best power to still make this engine work without problems?

And other thing, transmition ... for a 250TD transmition ... what power can it handle?
